  • 3 cloves garlic minced
  • 2-3 fillets anchovy fillets or 3 teaspoons of anchovy paste
  • 1/2 cup dry white wine such as Sauvignon Blanc, or chicken broth
  • 1 28-ounce can whole tomatoes preferably San Marzano
  • 1 teaspoon dried oregano or fresh oregano, adjust quantity
  • 1/2 teaspoon dried thyme or fresh thyme
  • 1/2 cup olives black or Castelvetrano, pitted
  • 2 tablespoons capers
For the Fish
  • 1 pound white fish such as cod, halibut, or tilapia
  • to taste teaspoon sea salt
  • optional fresh basil or parsley for garnish
  • optional teaspoon red pepper flakes for heat

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (205°C).
  2. Melt butter in a large ovenproof skillet over medium heat, then add minced garlic and anchovy fillets, cooking until fragrant.
  3. Pour in dry white wine and let it reduce for about 4 minutes, stirring occasionally.
  4. Add whole tomatoes, dried oregano, and dried thyme; let the sauce simmer for about 10 minutes until it thickens.
  5. Stir in olives and capers; let it simmer for a couple more minutes.
  6. Season the white fish with sea salt, then nestle it into the sauce, partially submerged.
  7. Bake the skillet in the preheated oven for 8-10 minutes until the fish is cooked through and flakes easily.
  8. Serve hot, garnished with fresh basil or parsley and red pepper flakes if desired.
