  • 2 medium Carrots Chopped, parsnips can be substituted
  • ¼ cup Fresh Parsley For garnish, cilantro can be used

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil over medium-high heat in a large pot.
  2. Brown 2 pounds of beef chuck for 5-7 minutes, then set aside.
  3. Sauté 1 chopped onion for 3-4 minutes, then add 3 cloves of minced garlic for another minute.
  4. Mix in 2 tablespoons of tomato paste and spices, cooking for 1-2 minutes.
  5. Return the browned beef to the pot and stir to combine.
  6. Add 4 cups of beef broth and 1 can of diced tomatoes, then bring to a boil.
  7. Add 1 diced green bell pepper and 2 chopped carrots, and simmer uncovered for another 15 minutes.
  8. Adjust seasoning with salt and black pepper, then garnish with parsley before serving.
