- Trim excess fat from 1 lb of chicken, cut into bite-sized pieces and set aside.
- In a bowl, combine 1 cup of teriyaki sauce, 1/4 cup soy sauce, and 1/4 cup honey. Add 4 minced garlic cloves and 2 tbsp of freshly grated ginger and whisk together.
- Place chicken in the crockpot, pour the teriyaki sauce mixture over the chicken, then layer 2 cups of bell peppers and 2 cups of broccoli on top.
- Cover the crockpot and cook on low for 4 to 6 hours, or high for 2 to 3 hours, checking for an internal temperature of 165°F.
- To thicken sauce, remove chicken and veggies from crockpot, simmer remaining sauce on medium until reduced, then mix back in.
- Serve hot, garnished with sesame seeds and chopped green onions.
