Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a greased 9x13 baking dish.
  2. In a mixing bowl, whisk together low sodium soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper to create apricot sauce.
  3. Coat chicken thighs in apricot sauce and place them skin side down in the greased baking dish.
  4. Bake the chicken in the oven for 20 minutes, then flip and spoon reserved sauce over the top.
  5. Return to the oven and bake for an additional 25–30 minutes until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C).
