- Preheat your oven to 425°F (220°C) and prepare a greased 9x13 baking dish.
- In a mixing bowl, whisk together low sodium soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper to create apricot sauce.
- Coat chicken thighs in apricot sauce and place them skin side down in the greased baking dish.
- Bake the chicken in the oven for 20 minutes, then flip and spoon reserved sauce over the top.
- Return to the oven and bake for an additional 25–30 minutes until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C).
