  • 1 can (4 ounces) diced green chiles optional hot chiles for more spice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika can substitute with regular paprika
  • to taste cilantro, chopped optional
  • 1 cup shredded cheese cheddar or pepper jack recommended

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the cubed potatoes, stirring often for 5-6 minutes until golden brown.
  3. Push potatoes to one side, add ground beef, onion, and bell pepper. Season with salt and pepper. Stir for 6-8 minutes until browned.
  4. Stir in diced green chiles, chili powder, cumin, and smoked paprika. Cook for an additional 2-3 minutes.
  5. Sprinkle shredded cheese over the mixture, cover, and let melt for about 1 minute.
  6. Garnish with cilantro if desired, and serve hot.
