  • 4 cups Cooked White Rice Cold, leftover rice preferred
For the Vegetables
  • 1 tablespoon Vegetable Oil Canola or sesame oil recommended
  • 1 cup Carrots Diced small
  • 1 cup Green Peas Quick-frozen, can be added directly
  • 1 medium Onion Sauté until translucent
  • 2 cloves Garlic Fresh, minced
For the Protein
  • 2 large Eggs Scrambled before mixing
For Seasoning
  • 3 tablespoons Soy Sauce Low-sodium recommended
  • 2 tablespoons Green Onions Chopped, for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the air fryer to 360°F (182°C) for about 5 minutes.
  2. Sauté diced onions and minced garlic in vegetable oil until translucent, about 2-3 minutes.
  3. Add diced carrots and continue cooking for another 2-3 minutes.
  4. Add cold, cooked rice and fry for about 3-4 minutes until heated through.
  5. Mix in soy sauce and any pre-cooked proteins, cooking for another 2-3 minutes.
  6. Create a space in the mixture, crack in the beaten eggs, scramble and cook for 2-3 minutes.
  7. Add green peas and green onions, stir, and cook for an additional 3-5 minutes.
  8. Remove from air fryer, serve hot with extra garnishing if desired.
