  • 1 medium Scotch bonnet pepper or jalapeño
  • 1 teaspoon ground allspice
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 2 tablespoons ketchup or tomato paste or diced tomatoes
  • 1/4 cup beef broth or water or vegetable broth
  • 1/2 cup plain breadcrumbs or crushed crackers/oats
  • 2 tablespoons vegetable oil or olive/coconut oil

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the flour, salt, sugar, and turmeric. Cut in cold unsalted butter until coarse crumbs form. Gradually mix in ice water and vinegar until just combined. Chill the dough in the refrigerator for 30 minutes.
  2. Heat vegetable oil in a skillet over medium heat. Sauté onion, scallions, garlic, and Scotch bonnet pepper until softened. Add ground beef and cook until browned. Stir in spices, ketchup, and beef broth; let simmer until thickened.
  3. Preheat oven to 375°F (190°C). Roll out the chilled dough on a floured surface. Use a round cutter to cut 5 inch circles. Place a spoonful of beef filling on one half, fold over, and seal edges.
  4. Line a baking sheet with parchment paper, arrange patties, and brush tops with egg wash or milk. Bake for 25–30 minutes until golden brown and flaky.
