Step-by-Step Instructions for Cowboy Butter Steak Linguine
  1. Preheat your oven to 425°F (220°C). Wash and slice the carrots into uniform pieces, toss them in olive oil, salt, and pepper, and roast for 15-20 minutes until tender.
  2. Bring a large pot of salted water to a rolling boil, add linguine, and cook until al dente (about 8-10 minutes). Drain pasta, reserving a cup of pasta water.
  3. Heat a skillet over medium-high heat, add olive oil. Season steak and sear for 2-3 minutes per side, then let it rest on a plate.
  4. In the same skillet, reduce heat, add butter and minced garlic, stirring for 30 seconds. Mix in lemon juice and Dijon mustard, add red pepper flakes if desired.
