  • 6 Eggs Use egg substitutes if needed.
  • 1/2 cup Milk/Half and Half Any milk type is fine, including almond milk.
  • 1/2 tsp Salt Adjust to taste or omit for lower sodium.
  • 1 tsp Garlic Powder Fresh herbs can be used as a substitute.
  • 2 cloves Minced Garlic
  • 1/4 tsp Black Pepper A pinch of cayenne can be used for extra kick.
  • 2 tbsp Butter Replace with olive oil for a lighter option.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease the muffin tin with non-stick spray or butter.
  2. In a large skillet over medium heat, melt a tablespoon of butter and add the breakfast sausage, onion, and colored peppers. Cook for 5-6 minutes until browned.
  3. In a mixing bowl, whisk together the eggs and milk. Add salt, garlic powder, minced garlic, and black pepper, followed by half the cheddar cheese.
  4. Spoon the sausage and vegetable mixture into each muffin cup evenly.
  5. Pour the egg mixture over the sausage in each muffin cup, filling them about three-quarters full. Sprinkle the remaining cheddar cheese on top.
  6. Bake in the preheated oven for 15-18 minutes until puffed and golden brown.
  7. Allow the muffins to cool in the tin for about 5 minutes before removing and transferring to a wire rack.
