  • 2 large Sweet Potatoes peeled and cubed

  • 1/4 cup Honey or maple syrup for vegan
  • 3 cloves Garlic minced
  • 2 tbsp Soy Sauce or tamari for gluten-free
  • 1 tsp Paprika or cayenne for heat
For Cooking
  • 1-2 tbsp Olive Oil or avocado oil

For Garnish
  • 1/4 cup Fresh Parsley chopped

Step-by-Step Instructions
  1. Peel and cube sweet potatoes into bite-sized pieces, about two large. Mince several cloves of garlic.
  2. Heat 1 to 2 tablespoons of olive oil in a large skillet over medium heat. Add sausage and cook for 5-7 minutes until browned.
  3. Stir in cubed sweet potatoes and cook for about 5 minutes until they start to soften.
  4. In a bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and pepper. Pour over sausage and sweet potatoes.
  5. Cover skillet, reduce heat to medium-low, and simmer for about 10 minutes until sweet potatoes are fork-tender.
  6. Remove lid, stir gently, and garnish with chopped parsley before serving.
