- Peel and cube sweet potatoes into bite-sized pieces, about two large. Mince several cloves of garlic.
- Heat 1 to 2 tablespoons of olive oil in a large skillet over medium heat. Add sausage and cook for 5-7 minutes until browned.
- Stir in cubed sweet potatoes and cook for about 5 minutes until they start to soften.
- In a bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and pepper. Pour over sausage and sweet potatoes.
- Cover skillet, reduce heat to medium-low, and simmer for about 10 minutes until sweet potatoes are fork-tender.
- Remove lid, stir gently, and garnish with chopped parsley before serving.
