Ingredients
  

For the Wraps
  • 4 whole Whole Wheat Tortillas or gluten-free tortillas
  • 1 cup Red Bell Pepper, diced
  • 1 cup Yellow Bell Pepper, diced
  • 1 cup Green Bell Pepper, diced
  • 1 medium Zucchini, sliced into thin rounds
  • 1 medium Red Onion, sliced into thick rings
  • 2 medium Carrots, cut into thin sticks
For Roasting
  • 2 tablespoons Extra Virgin Olive Oil
For Assembly
  • 0.5 cup Hummus for spreading
  • 2 cups Fresh Spinach to fill wraps

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and chop the veggies into bite-sized pieces and toss with olive oil, salt, and pepper.
  3. Spread seasoned veggies in a single layer on the baking sheet and roast for 25-30 minutes, stirring halfway.
  4. Allow the roasted veggies to cool on the baking sheet for a few minutes.
  5. Spread hummus over a tortilla, add roasted veggies and spinach, then roll tightly.
