Ingredients
  

For the Salad
  • 8 oz Spaghetti Use gluten-free pasta if needed.
  • 2 cups Cherry tomatoes Can substitute with seasonal tomatoes.
  • 1 cup Cucumbers Bell peppers can be a tasty alternative.
  • 1/4 cup Red onion Use green onions or shallots for milder taste.
  • 1/4 cup Black olives Kalamata or any favorite olives work well.
  • 1/4 cup Green olives Pick your favorite olives for a personal twist.
  • 1 cup Feta cheese Crumbled, can substitute with mozzarella or goat cheese.
For the Dressing
  • 1/3 cup Extra virgin olive oil Choose a high-quality oil.
  • 3 tbsp Lemon juice Fresh lemon juice is ideal.
  • 1 tbsp Honey Agave syrup or maple syrup can be used.
  • 1 tbsp Italian seasoning Homemade herb blends work too.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions, about 8-10 minutes, until al dente. Drain and rinse under cold water.
  2. In a medium bowl, combine olive oil, lemon juice, honey, and Italian seasoning. Whisk until well blended and season with salt and pepper.
  3. In a large mixing bowl, add halved cherry tomatoes, sliced cucumbers, chopped red onion, and black and green olives. Drizzle dressing over vegetables and gently toss.
  4. Add cooled spaghetti and crumbled feta to the vegetable mixture and toss to combine.
  5. Taste and adjust seasoning with salt, pepper, or lemon juice as needed. Let sit for 15 minutes before serving.
