Step-by-Step Instructions
  1. Juice the Lime: Roll fresh limes on your counter, cut them in half, and juice them aiming for about 1 ounce of lime juice.
  2. Prepare Raspberry Syrup (Optional): Combine ½ cup of fresh raspberries, ½ cup of sugar, and ½ cup of water in a small saucepan. Simmer for 10-15 minutes, strain, and let cool.
  3. Combine Ingredients in Shaker: In a cocktail shaker, add tequila, passionfruit juice, raspberry syrup, lime juice, and egg white or aquafaba.
  4. Dry Shake for Foam: Shake without ice for 15-20 seconds to emulsify the egg white/aquafaba and create foam.
  5. Add Ice and Shake: Add ice to the shaker and shake vigorously for another 15-20 seconds.
  6. Strain the Cocktail: Double-strain into a chilled coupe or martini glass.
  7. Garnish and Serve: Garnish with fresh raspberries or a lime wedge, serve and enjoy!
