- Preheat your oven to 350°F (175°C) and line two baking trays with parchment paper.
- In a large mixing bowl, combine 1 cup of softened butter and 1 cup of granulated sugar. Beat until light and fluffy.
- Add 1 egg and 2 teaspoons of vanilla extract, mixing on low speed until just combined.
- In another bowl, whisk together 2 cups of flour, 1 teaspoon of baking powder, 0.5 teaspoon of baking soda, and 0.25 teaspoon of salt. Gradually add to the wet mixture.
- Divide the dough into four parts and knead different flavored Jello powder into each.
- Roll tablespoon-sized portions of dough into balls and coat in granulated sugar.
- Place the cookie balls on baking trays, leaving space between them. Bake for 8-10 minutes.
- Allow to cool on trays for 5 minutes before transferring to wire racks.
