Step-by-Step Instructions
  1. Blend Base: Place 1 cup of cooked chickpeas and 1 cup of pitted dates into a food processor. Pulse until smooth and creamy, adding warm water if needed. It takes about 2-3 minutes.
  2. Mix Ingredients: Add 1/2 cup of oats, 1/4 cup of nut butter, honey or maple syrup, 1 teaspoon of vanilla extract, a sprinkle of cinnamon, and salt. Blend again for 1-2 minutes until thick and combined.
  3. Fold in Chocolate Chips: If using, fold in 1/4 cup of dark chocolate chips gently with a spatula to distribute evenly.
  4. Prepare Dish: Line an 8x8-inch baking dish with parchment paper, pour the mixture, and press down firmly to create a compact layer.
  5. Chill: Refrigerate for at least 1 hour to firm up the bars.
  6. Slice & Serve: Remove from the refrigerator, lift out using the parchment paper, and slice into evenly sized bars.
