  • 1 tablespoon Sugar Optional, to balance acidity.
  • 1 teaspoon Thyme Fresh or dried.
  • 2 tablespoons Worcestershire Sauce For umami depth.
  • 2 leaves Bay Leaves Remove before serving.
  • 1 teaspoon Smoked Paprika Subtle smokiness.
  • 1 teaspoon Black Pepper Preferably freshly ground.
For the Vegetables
  • 2 tablespoons Butter Kerrygold for rich flavor.
  • 1 medium Onion Chopped into 1/2-inch pieces.
  • 3 medium Carrots Cut into 1-inch pieces.
  • 2 cups Potatoes Cubed into 1-inch pieces.
  • 1/4 cup Parsley For garnish.

Method
 

Preparation
  1. Prep your ingredients: peel and cube potatoes, chop onion, slice carrots, and mince garlic.
  2. In a large pot, heat olive oil and brown the beef seasoned with salt.
  3. Sauté minced garlic, add tomato paste, and mix well.
  4. Combine beef stock, water, stout, red wine, sugar, thyme, Worcestershire sauce, bay leaves, and smoked paprika.
  5. Simmer the beef for 1 hour.
  6. Melt butter in a skillet and sauté onions and carrots until softened.
  7. Add sautéed vegetables and cubed potatoes to the beef pot, season, and cook uncovered.
  8. Skim fat, remove bay leaves, adjust seasoning, and garnish with parsley before serving.
