Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish with vegan butter or coconut oil.
  2. In a mixing bowl, combine rolled oats, baking powder, cinnamon, and salt. Stir well.
  3. Add almond milk, maple syrup, chia egg, melted vegan butter, and vanilla extract. Mix until smooth.
  4. In a saucepan, melt vegan butter with maple syrup over low heat, add chopped pecans and stir.
  5. Pour the oatmeal mixture into the greased baking dish and top with the pecan mixture. Bake for 35-40 minutes.
  6. Allow to cool for 5 minutes before serving warm.
