Dough Preparation
- Warm 1 cup of non-dairy milk to about 110°F, then sprinkle in instant yeast and brown sugar; let it foam for about 5 minutes.
- Add melted plant-based butter and mashed ripe banana. Gradually mix in flour and fine sea salt until a smooth, elastic dough forms.
Kneading and Rising
- Knead the dough on medium speed for about 5 minutes, until soft and elastic.
- Transfer dough to a greased bowl, cover with a damp cloth, and let rise in a warm area for about 45 minutes, or until doubled in size.
Filling Preparation
- Punch dough down and roll it out into a rectangle measuring 15x9 inches.
- Spread softened plant-based butter over the surface, layer creamy peanut butter, brown sugar, ground cinnamon, and banana slices.
Rolling and Cutting
- Starting from one long edge, tightly roll the dough into a log shape.
- Slice into 12 equal rolls and arrange in a greased baking dish.
Second Rise
- Cover the rolls with a kitchen towel and let rise for another 15 minutes.
Baking
- Preheat your oven to 350°F (175°C). Bake for 18-20 minutes until lightly golden brown.
Glaze Preparation
- Whisk together powdered sugar, creamy peanut butter, vanilla extract, and enough non-dairy milk to achieve a smooth consistency.
Serving
- Once baked, cool slightly and drizzle the peanut butter glaze over the rolls.

Notes
Use fresh yeast for better results and avoid adding too much flour when rolling out the dough to maintain softness.
