Method
 

Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter; press into the bottom of the pan. Bake for 10 minutes and cool.
  3. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing gently.
  4. Pour cheesecake filling over crust and spread evenly. Tap the pan to release air bubbles.
  5. Toss sliced peaches with cinnamon and spread over cheesecake layer.
  6. Mix flour, brown sugar, and oats; cut in cold butter until coarse crumbs form. Sprinkle over peach layer.
  7. Bake for 45-50 minutes until edges are set but center jiggles slightly.
  8. Cool at room temperature for an hour, then refrigerate for at least 2 hours before serving.
