Ingredients

Pancakes
  • 1 cup All-Purpose Flour Consider a gluten-free blend for a dietary twist.
  • 2 teaspoons Baking Powder Make sure it’s fresh for the best results.
  • 2 tablespoons Granulated Sugar Optional to reduce for a less sweet batter.
  • 1 cup Whole Milk Swap with non-dairy milk if preferred.
  • 2 tablespoons Unsalted Butter Alternatively, use olive oil for a dairy-free option.
Filling
  • 8 slices Thick-Cut Bacon Consider turkey bacon as a leaner alternative.
  • 4 large Eggs Avoid overcooking for the best texture.
  • 1 cup Orange Cheddar Cheese Any aged cheese can work for similar taste.
  • 2 tablespoons Fresh Chives Feel free to substitute with green onions.
  • 1 teaspoon Black Pepper Freshly cracked pepper adds depth to the dish.

Equipment

  • Skillet
  • Griddle
  • Mixing Bowl

Method

Cooking Steps
  1. Heat a large skillet over medium heat and add thick-cut bacon strips. Cook for about 8-10 minutes or until dark brown and crispy, flipping halfway through. Transfer to a paper towel to drain excess grease.
  2. In a bowl, whisk together large eggs with a pinch of salt. In the same skillet, melt unsalted butter over low heat. Pour in the eggs and gently cook for 3-4 minutes, stirring until soft curds form. Remove from heat just before fully set.
  3. In a medium bowl, combine all-purpose flour, baking powder, and granulated sugar. Gradually fold in whole milk and melted butter until just mixed. Don’t worry about a few lumps.
  4. Preheat a griddle or non-stick skillet over medium heat. Lightly grease it and pour about 1/4 cup of pancake batter for each pancake. Cook for 2-3 minutes, until bubbles form and then flip to cook for another 1-2 minutes until golden brown.
  5. Fold each warm pancake into a U-shape. Fill with crispy bacon, soft scrambled eggs, and cheese. Garnish with fresh chives and black pepper, and serve immediately.

Notes

Ensure pancakes are warm when folding to prevent cracking. Cook scrambled eggs on low heat to keep them creamy. Use a well-seasoned skillet for cooking pancakes for even browning.
