Cooking Steps
- Heat a large skillet over medium heat and add thick-cut bacon strips. Cook for about 8-10 minutes or until dark brown and crispy, flipping halfway through. Transfer to a paper towel to drain excess grease.
- In a bowl, whisk together large eggs with a pinch of salt. In the same skillet, melt unsalted butter over low heat. Pour in the eggs and gently cook for 3-4 minutes, stirring until soft curds form. Remove from heat just before fully set.
- In a medium bowl, combine all-purpose flour, baking powder, and granulated sugar. Gradually fold in whole milk and melted butter until just mixed. Don’t worry about a few lumps.
- Preheat a griddle or non-stick skillet over medium heat. Lightly grease it and pour about 1/4 cup of pancake batter for each pancake. Cook for 2-3 minutes, until bubbles form and then flip to cook for another 1-2 minutes until golden brown.
- Fold each warm pancake into a U-shape. Fill with crispy bacon, soft scrambled eggs, and cheese. Garnish with fresh chives and black pepper, and serve immediately.
