  • 2 tablespoons Olive Oil Avocado oil works as a substitute.
For the Seasoning
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used.
  • 1 teaspoon Onion Powder Can be omitted if needed.
  • 1 teaspoon Paprika Choose sweet or smoked based on preference.
  • 1 teaspoon Dried Thyme Italian seasoning can substitute.
  • 1 teaspoon Salt Sea salt or kosher salt recommended.
  • 1 teaspoon Black Pepper Freshly ground is preferred.
  • 1 tablespoon Lemon Juice Optional; lime juice can be used.

Method
 

Cooking Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, whisk together the olive oil and seasonings. Optionally add lemon juice.
  4. Coat the chicken thighs with the marinade.
  5. Line a baking sheet with foil and place a wire rack on top. Arrange chicken on the rack skin-side up.
  6. Bake for 35-40 minutes until the internal temperature reaches 165°F (75°C).
  7. Optionally broil for an additional 2-3 minutes for extra crispiness.
  8. Allow chicken to rest for 5 minutes before serving.
