Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the smoked sausage, mince the garlic, and chop the red and yellow bell peppers, baby carrots, and broccoli.
  3. Toss the halved baby potatoes and baby carrots with 1 tablespoon of olive oil and roast for 10 minutes.
  4. In a medium bowl, whisk together honey, minced garlic, soy sauce, and remaining tablespoon of olive oil.
  5. Add sliced kielbasa and remaining chopped vegetables to the baking sheet, pour the honey garlic mixture over, and roast for an additional 20-25 minutes.
  6. Allow to rest for about 2 minutes, then garnish with parsley or green onions before serving.
