  • 4 pieces Boneless, Skinless Chicken Thighs Chicken breasts may be used, but watch cooking time to prevent dryness.

  • 1.5 pounds Baby Potatoes Yukon Gold or red potatoes work well too.

  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Dried Thyme
  • to taste Chili Flakes (optional)
For the Sauce
  • 1 cup Low-Sodium Chicken Broth You can use gluten-free broth if needed.
  • 1/2 piece Juice of Lemon
For Serving
  • 1/4 cup Fresh Parsley (chopped)

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken thighs dry and season with smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat 2 tablespoons of olive oil in a skillet and sear the chicken for 3-4 minutes on each side.
  4. Add remaining olive oil and 2 tablespoons of unsalted butter, then sauté minced garlic until fragrant.
  5. Add halved baby potatoes, dried rosemary, thyme, and optional chili flakes, seasoning with salt and pepper.
  6. Pour in chicken broth and nestle seared chicken back into the skillet with potatoes.
  7. Transfer skillet to the oven and bake for 25-30 minutes until the chicken is cooked through and potatoes are tender.
  8. Drizzle lemon juice over the dish, garnish with chopped parsley, and serve.
