- Melt the Nutella in a microwave-safe bowl for about 30-45 seconds until it's warm and pourable. Stir well and set aside.
- In a medium saucepan, combine 1 cup of water, 1 stick of unsalted butter, 1/2 teaspoon of salt, and 1/4 cup of granulated sugar. Bring to a boil.
- Once boiling, remove from heat and stir in 1 cup of all-purpose flour until a cohesive dough forms.
- Let the dough cool for about 5 minutes, then add 2 beaten eggs, mixing until smooth and slightly sticky.
- Mix 1/2 cup of granulated sugar with 1 tablespoon of ground cinnamon for your coating.
- Heat 2-3 inches of vegetable or canola oil to 350°F.
- Transfer dough to a piping bag and pipe 4-6 inch strips into the hot oil. Fry for 2-3 minutes on each side until golden-brown.
- Remove churros from oil and drain on paper towels. Roll in cinnamon sugar coating while warm.
- Serve the churro bites immediately with melted Nutella for dipping.
