Ingredients
  

Filling
  • 8 oz Cream Cheese softened
  • 1 pinch Fine Sea Salt
  • 1 tsp Clear Vanilla Extract or pure vanilla as substitute
  • 1 cup Strawberry Cake Mix use a 13.25 or 15.25 oz box
Coating
  • 1 cup Almond Bark or Pink Melting Wafers or chocolate chips in a pinch
  • 1 oz White Chocolate optional for drizzling
Decoration
  • to taste Valentine's Day Festive Sprinkles for decoration

Method
 

Preparation
  1. In a large mixing bowl, beat 8 ounces of softened cream cheese with a hand mixer on medium speed until smooth and creamy, about 2 minutes.
  2. Add a pinch of fine sea salt and 1 teaspoon of clear vanilla extract, mixing until well combined.
  3. Gradually add in the strawberry cake mix, about 1 cup at a time, mixing on low speed until the dough forms a thick and crumbly texture, approximately 3 minutes.
  4. Cover the mixing bowl with plastic wrap and refrigerate the mixture for at least 2 hours.
  5. In a microwave-safe bowl, melt 1 cup of almond bark or pink melting wafers in 30-second intervals, stirring between each, until fully melted and smooth.
  6. Once the filling is chilled, use a cookie scoop to portion out the dough, creating 1-inch balls.
  7. Roll each portion between your palms until smooth, then dip each ball into the melted coating using a toothpick or fork.
  8. While the coating is still tacky, sprinkle desired Valentine's Day festive sprinkles over each bite.
  9. If desired, drizzle melted white chocolate over the top of each bite for an added sweet layer.
  10. Allow the bites to set at room temperature for about 30 minutes before storing in an airtight container.
