Preparation
- In a large mixing bowl, beat 8 ounces of softened cream cheese with a hand mixer on medium speed until smooth and creamy, about 2 minutes.
- Add a pinch of fine sea salt and 1 teaspoon of clear vanilla extract, mixing until well combined.
- Gradually add in the strawberry cake mix, about 1 cup at a time, mixing on low speed until the dough forms a thick and crumbly texture, approximately 3 minutes.
- Cover the mixing bowl with plastic wrap and refrigerate the mixture for at least 2 hours.
- In a microwave-safe bowl, melt 1 cup of almond bark or pink melting wafers in 30-second intervals, stirring between each, until fully melted and smooth.
- Once the filling is chilled, use a cookie scoop to portion out the dough, creating 1-inch balls.
- Roll each portion between your palms until smooth, then dip each ball into the melted coating using a toothpick or fork.
- While the coating is still tacky, sprinkle desired Valentine's Day festive sprinkles over each bite.
- If desired, drizzle melted white chocolate over the top of each bite for an added sweet layer.
- Allow the bites to set at room temperature for about 30 minutes before storing in an airtight container.
