Step-by-Step Instructions
  1. Line an 8-inch square baking dish with parchment paper.
  2. In a large mixing bowl, beat 8 ounces of softened cream cheese and 1 cup of confectioners' sugar until smooth.
  3. Add 1 teaspoon of vanilla extract and pink food coloring, mixing until combined.
  4. In another bowl, combine 1.5 cups of graham cracker crumbs with 1/4 cup of melted butter.
  5. Press the crust mixture into the bottom of the baking dish.
  6. Pour the cheesecake filling over the crust and spread it evenly.
  7. Cover and refrigerate for at least 4 hours to set.
  8. Remove from dish using parchment overhang, slice into squares, and serve chilled.
