Preparation Steps

  3. Mash the blueberries in a bowl until smooth. Whisk together with chia seeds, sugar, lemon juice, and salt.
  4. Let the blueberry mixture sit for about 5-10 minutes to thicken.
  5. Fold in Greek yogurt until smooth and creamy.
  6. Pour the filling into the chilled crust and smooth the top. Cover with plastic wrap and chill for at least 3-4 hours or overnight.
  7. Garnish with fresh blueberries, lemon zest, and mint leaves before serving.
