  • 8 ounces Cremini Mushrooms Sliced
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Cumin
  • to taste Kosher Salt
  • to taste Black Pepper
  • ½ tablespoon Fresh Lime Juice From half a lime
  • 1 handful Cilantro Chopped for garnish
For the Tacos
  • 8 pieces Corn Tortillas Can substitute with flour tortillas
  • ½ cup Cotija Cheese Crumbled; optional for a vegan version

Method
 

Step-by-Step Instructions
  1. Start by cleaning the cremini mushrooms with a damp cloth to remove any dirt. Slice them evenly.
  2. Heat olive oil in a skillet over medium-high heat. Add chopped yellow onion and sauté until translucent.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Add sliced mushrooms to the skillet and sauté for 7-8 minutes until browned.
  5. Sprinkle in smoked paprika, cumin, kosher salt, and black pepper to taste. Stir and cook for 2 minutes.
  6. Remove from heat and stir in lime juice and chopped cilantro.
  7. Toast corn tortillas in a dry skillet for 30-60 seconds until lightly charred.
  8. Assemble tacos by placing mushroom mixture on each tortilla, topping with cotija cheese and additional cilantro.
