Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, combine diced potatoes with cheddar cheese, crumbled bacon, minced garlic, and onions. Add mayonnaise or Greek yogurt and mix gently until well-coated.
  3. Pour the potato mixture into the prepared baking pan, spreading it evenly and press down gently.
  4. Cover with aluminum foil and bake for 1.5 hours. Remove the foil for the last 30 minutes to allow the top to crisp up.
  5. Let cool for 10 minutes, garnish with sour cream and fresh herbs, cut into squares, and serve warm.
