Preparation Steps
- Marinate the chicken by combining it with browning sauce, Jamaican Green Seasoning, sea salt, On Everything All-Purpose Blend, smoked paprika, and Jamaican curry powder. Refrigerate for at least 3 hours or overnight.
- Brown the chicken in a skillet with olive oil and brown sugar for 3-4 minutes on each side until golden brown.
- Burn the curry powder in the same skillet for 2-3 minutes until fragrant.
- Add garlic, ginger, Scotch bonnet peppers, green onions, carrots, and bell pepper. Sauté for 3-4 minutes.
- Pour in coconut milk and chicken stock, and bring to a gentle boil. Add browned chicken, potatoes, and thyme. Simmer for 20-25 minutes.
- Check seasoning and serve over rice, optionally garnishing with green onions and red pepper flakes.
