Ingredients
  

For the Chicken
  • 3-4 lbs Organic Chicken skin removed
  • 1-2 Tbsps Browning Sauce optional
  • 2-3 Tbsps Jamaican Green Seasoning or all-purpose seasoning
For the Spice Blend
  • 2-2.5 Tbsps Jamaican Curry Powder burning it enhances flavor
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp Sea Salt adjust to taste
  • ½ tsp Smoked Paprika
  • 1 tsp Ground Allspice
  • Black Pepper to taste
For the Sauce and Vegetables
  • 4 Tbsps Extra Virgin Olive Oil
  • 2 Tbsps Organic Brown Sugar adjust according to preference
  • 1 can Coconut Milk 14 oz., full-fat
  • 2 medium Potatoes peeled and cubed
  • 2 medium Carrots peeled and chopped
  • 1 medium Bell Pepper chopped
  • 3 cloves Garlic minced
  • 2 tsps Fresh Ginger minced or ½ tsp ground
  • 1-3 Scotch Bonnet Peppers to taste
  • 2 Green Onions lightly crushed or chopped
  • 2 Fresh Thyme Sprigs
  • 1 cup Chicken Stock low-sodium
  • 1 Tbsp Jamaican Pepper Sauce or preferred hot sauce

Method
 

Preparation Steps
  1. Marinate the chicken by combining it with browning sauce, Jamaican Green Seasoning, sea salt, On Everything All-Purpose Blend, smoked paprika, and Jamaican curry powder. Refrigerate for at least 3 hours or overnight.
  2. Brown the chicken in a skillet with olive oil and brown sugar for 3-4 minutes on each side until golden brown.
  3. Burn the curry powder in the same skillet for 2-3 minutes until fragrant.
  4. Add garlic, ginger, Scotch bonnet peppers, green onions, carrots, and bell pepper. Sauté for 3-4 minutes.
  5. Pour in coconut milk and chicken stock, and bring to a gentle boil. Add browned chicken, potatoes, and thyme. Simmer for 20-25 minutes.
  6. Check seasoning and serve over rice, optionally garnishing with green onions and red pepper flakes.
