Step-by-Step Instructions for Antojitos
  1. Preheat your oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened cream cheese, diced green chilies, shredded cheddar cheese, diced red onion, colorful bell pepper, sour cream, paprika, garlic powder, onion powder, and a pinch of cayenne. Blend until smooth and creamy.
  3. Lay out your flour tortillas and evenly divide the creamy filling among them, leaving about an inch from the edges for easy rolling. Roll each tortilla tightly and place seam-side down on the baking sheet.
  4. Slice each rolled tortilla into about five pieces at a 45-degree angle and arrange cut-side up on the baking sheet.
  5. Bake for 8 minutes in the preheated oven, then switch to broil and watch for an additional 5 minutes until golden-brown.
  6. Allow the Antojitos to cool slightly, then mix sour cream with basil pesto to create the dip.
  7. Serve the warm Antojitos on a platter with the pesto sour cream dip.
