- Preheat your oven to 375°F (190°C) and grease a 15x10-inch jelly roll pan.
- Combine sugar, sour cream, melted butter, and eggs in a mixing bowl. Beat until creamy and well-combined (2-3 minutes).
- Mix in the mashed ripe bananas and vanilla extract until fully incorporated.
- Sift in all-purpose flour, baking soda, and salt. Fold gently until just combined. Add chopped walnuts if desired.
- Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes or until edges are golden and a toothpick comes out mostly clean.
- To make the brown butter frosting, melt butter in a saucepan over medium heat until golden brown and nutty (5-7 minutes).
