Method
 

Step-by-Step Instructions for Mochi Cinnamon Rolls
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together glutinous rice flour, baking powder, sugar, and salt until well combined.
  3. In a medium saucepan, gently heat milk and unsalted butter until the butter has melted and the mixture is steaming.
  4. Pour the hot milk and butter mixture into the bowl of dry ingredients. Stir gently until resembling small pebbles.
  5. Incorporate one beaten egg into the dough mixture until a cohesive dough forms.
  6. Shape the dough into a rectangular block and roll out to a 6"x10" rectangle.
  7. Brush the dough with melted butter and sprinkle cinnamon and sugar over the surface.
  8. Starting from the short edge, roll the dough into a log and slice into 6 even pieces.
  9. Place the sliced rolls into a muffin tin brushed with melted butter.
  10. Bake for about 25 minutes until golden brown.
  11. Allow rolls to cool for about 5 minutes before transferring to a cooling rack.
  12. Mix icing sugar with milk or water until smooth and drizzle over the cooled rolls.
