  1. Begin by dicing the onions, carrots, celery, and potatoes evenly; set them nearby.
  2. In a large pot, heat 1 tablespoon of olive oil or butter over medium heat until it begins to shimmer.
  3. Add the diced onions, carrots, and chopped celery to the pot, cooking them for about 5–7 minutes until softened.
  4. Stir in the minced garlic and diced ham, cooking together for an additional minute.
  5. Carefully add 6 cups of chicken broth, bay leaf, thyme, and diced potatoes into the pot. Stir to combine.
  6. Increase the heat to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for 20–25 minutes.
