Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. Season both sides of the chicken breasts with salt, pepper, and half of your dried herbs.
  3. Combine thinly sliced zucchini, olive oil, minced garlic, lemon juice, and remaining herbs in a mixing bowl, tossing to coat.
  4. Arrange the seasoned chicken breasts in the center of the baking dish and surround them with the zucchini mixture.
  5. Bake for 25 to 30 minutes, ensuring the chicken reaches an internal temperature of 165°F and the zucchini is tender.
  6. In the last 5 minutes of baking, sprinkle cheese over the top and return to the oven to melt.
  7. Let the dish rest for 5 to 10 minutes before slicing the chicken and serving.
