Method

Step-by-Step Instructions for Lucky Charms Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, combine softened unsalted butter and granulated sugar. Beat on medium speed for 2-3 minutes until pale and fluffy.
  3. Add the large egg and vanilla extract to the creamed mixture. Mix on low speed until fully incorporated.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, and salt. Gradually add this to the wet ingredients.
  5. Gently fold in 1 cup of the Lucky Charms marshmallows using a spatula.
  6. Scoop out 2-tablespoon-sized balls of dough and place them 2 inches apart on the prepared baking sheet.
  7. Bake the cookies for 9-11 minutes until the edges are light golden brown and the tops appear set but soft.
  8. Press the remaining Lucky Charms marshmallows into the tops of each cookie while they’re hot.
  9. Let the cookies cool on the baking sheet for about 5 minutes, then transfer to wire racks to cool completely.
