Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C). Gather all ingredients.
  2. Wash and dice 2–3 Russet or Yukon Gold potatoes into ¾-inch cubes.
  3. Drizzle diced potatoes with olive oil and sprinkle with seasonings. Toss to coat.
  4. Spread seasoned potatoes on a baking sheet and roast for 25–30 minutes, flipping halfway.
  5. While potatoes are roasting, brown 1 lb of ground beef in a skillet over medium heat.
  6. Add taco seasoning and a splash of water, simmer for about 5–7 minutes until thickened.
  7. Remove the potatoes from the oven and sprinkle cheese over them to melt.
  8. Spoon cooked ground beef or seasoned black beans over the melted cheese.
  9. Top with sour cream or Greek yogurt, salsa, and fresh toppings before serving.
