Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and gather your ingredients. Line a baking sheet with parchment paper.
  2. Wash and dice about 2 pounds of potatoes into ¾-inch cubes. Combine with olive oil and seasonings in a mixing bowl.
  3. Spread the seasoned potatoes on the baking sheet. Roast for 25-30 minutes, flipping halfway through.
  4. Heat a skillet over medium heat, add your protein, and cook until browned. Add taco seasoning and simmer.
  5. Transfer roasted potatoes to bowls and sprinkle shredded cheese on top to melt.
