- Grease a 9x9-inch baking pan with cooking spray or butter, or line it with parchment paper.
- Melt 4 tablespoons of butter over low heat in a medium saucepan, then add 10 oz of mini marshmallows and stir until smooth.
- Remove from heat and stir in grated zest from one organic lemon and optional lemon extract.
- Add about 6 cups of Rice Krispies cereal to the mixture, stirring gently until fully coated.
- Transfer the mixture into the prepared baking pan and press down evenly without squashing.
- Melt 1 cup of white chocolate chips and drizzle over the pressed treats.
- Allow the treats to cool at room temperature for at least 30 minutes before cutting into squares.
