Step-by-Step Instructions
  1. Grease a 9x9-inch baking pan with cooking spray or butter, or line it with parchment paper.
  2. Melt 4 tablespoons of butter over low heat in a medium saucepan, then add 10 oz of mini marshmallows and stir until smooth.
  3. Remove from heat and stir in grated zest from one organic lemon and optional lemon extract.
