  • 1 cup Whipped Cream
  • 1 cup Whole Cherries For garnish.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the pan.
  3. Bake the crust for about 10 minutes, then set aside to cool.
Cheesecake Filling
  1. Beat cream cheese with 1 cup of sugar until smooth. Add vanilla and eggs one at a time.
  2. Incorporate lemon juice, lime juice, lemon zest, and lime zest until smooth.
  3. Fold in chopped pistachios and cherries gently.
  4. Pour the mixture over the cooled crust and smooth the top.
  5. Bake for 50-60 minutes until the center jiggles slightly. Cool gradually.
Final Steps
  1. Chill the cheesecake for at least 4 hours before serving.
  2. Top with whipped cream and garnish with cherries and pistachios before serving.
