Step-by-Step Instructions
  1. Generously season the chuck roast with kosher salt and let it rest for about 10 minutes.
  2. Cut the seasoned roast into manageable 3-inch pieces.
  3. In a Dutch oven, heat vegetable oil over medium-high heat and sear meat pieces for 3-4 minutes on each side.
  4. Remove the meat from the pot and set aside.
  5. Add diced sweet onion, grated fresh ginger, and minced garlic to the pot and sauté for 5 minutes.
  6. Add gochujang paste, brown sugar, and soy sauce/tamari. Stir and cook for 2 minutes.
  7. Pour in beef stock, scrape the bottom of the pot, and bring to a simmer for 3 minutes.
  8. Return browned meat pieces to the pot, ensuring they are submerged.
  9. Cover and bake in a preheated oven at 350°F for about 2 hours.
  10. Let the pot roast rest for about 10 minutes, then serve with sauce garnished with fresh cilantro.
