- In a mixing bowl, combine ground pork, jerk seasoning, minced garlic, grated ginger, and chopped scallions. Blend thoroughly for 2-3 minutes.
- Take a scoop of the mixture and roll it into meatballs, about 1 to 2 inches in diameter.
- Heat oil in a skillet over medium-high heat and brown the meatballs on all sides for 5-7 minutes.
- In the same skillet, add canned coconut milk, Jamaican curry powder, and a pinch of salt. Simmer for 3-5 minutes.
- Return the browned meatballs to the skillet and let them simmer for 15-20 minutes.
- Serve the meatballs over jasmine rice or sautéed veggies.
