Coconut Curry Sauce
  • 1 can Canned Coconut Milk Full-fat preferred for richness.
  • 1 tbsp Jamaican Curry Powder Essential for authenticity.
  • 1 tbsp Brown Sugar Can substitute with honey or maple syrup.

Method
 

Preparation
  1. In a mixing bowl, combine ground pork, jerk seasoning, minced garlic, grated ginger, and chopped scallions. Blend thoroughly for 2-3 minutes.
  2. Take a scoop of the mixture and roll it into meatballs, about 1 to 2 inches in diameter.
  3. Heat oil in a skillet over medium-high heat and brown the meatballs on all sides for 5-7 minutes.
  4. In the same skillet, add canned coconut milk, Jamaican curry powder, and a pinch of salt. Simmer for 3-5 minutes.
  5. Return the browned meatballs to the skillet and let them simmer for 15-20 minutes.
  6. Serve the meatballs over jasmine rice or sautéed veggies.
