Ingredients
  

For the Coleslaw
  • 2 cups green cabbage thinly sliced
  • 2 cups purple cabbage thinly sliced
  • 1 cup carrots julienned
  • 2-3 pcs jalapenos chopped, seeds removed for less spice
  • 1 bunch cilantro finely chopped
  • 4 pcs green onions sliced
For the Lime Vinaigrette
  • 1/4 cup lime juice freshly squeezed
  • 1/4 cup olive oil or avocado oil
  • 1 tbsp honey or erythritol for low-carb
  • 1-2 cloves garlic minced

Method
 

Preparation Steps
  1. Wash and slice green and purple cabbage, julienne carrots, chop jalapenos, cilantro, and green onions. Combine in a large bowl.
  2. In a separate bowl, whisk together lime juice, olive oil, honey, minced garlic, and seasonings until emulsified.
  3. Pour the vinaigrette over the vegetable mixture and toss to coat evenly.
  4. Chill the coleslaw in the refrigerator for at least 30 minutes before serving.
