Ingredients

For the Crust
  • 2 cups All-purpose flour Use gluten-free 1:1 baking flour for a gluten-free version.
  • 1 cup Granulated sugar No substitutions recommended, but coconut sugar offers a deeper flavor.
  • 1/2 cup Light brown sugar Can substitute with more granulated sugar if needed.
  • 1/2 teaspoon Salt Essential for balancing sweetness.
  • 1 teaspoon Baking powder Always check for freshness.
  • 1 cup Unsalted butter Swap with coconut oil for a dairy-free alternative.
For the Filling
  • 1 can Sweetened condensed milk Use dairy-free condensed milk for a dairy-free version.
  • 4 large Egg yolks Replacements can alter texture, so they’re necessary here.
  • 1/2 cup Heavy cream Substitute with coconut cream for a dairy-free option.
  • 1/2 cup Fresh lemon juice Use freshly squeezed juice for the best flavor.

Step-By-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, light brown sugar, salt, and baking powder until well combined.
  3. Melt the butter and pour it into the dry ingredients. Stir until crumbly and set aside ⅓ of the mixture for topping.
  4. Bake the crust in the preheated oven for 15 minutes until lightly golden brown.
  5. In a separate bowl, whisk together the sweetened condensed milk, egg yolks, heavy cream, and salt until smooth. Gradually mix in the lemon juice.
  6. Pour the lemon filling over the hot crust and sprinkle the reserved crumb mixture on top.
  7. Return the baking pan to the oven and bake for an additional 15 to 20 minutes until the top is golden and the filling is set.
  8. Allow the bars to cool completely at room temperature before chilling in the refrigerator for at least 4 hours before slicing.
