Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a standard loaf pan.
  2. In a medium saucepan, melt 1/2 cup of unsalted butter over medium heat, stirring constantly until browned.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  4. In a separate bowl, mash bananas until smooth and mix in Greek yogurt, vanilla extract, and almond extract.
  5. Gently pour the wet banana mixture into the bowl of dry ingredients and fold until just combined.
  6. In a skillet, melt another tablespoon of butter, add sliced bananas and honey; cook until soft and golden.
  7. Remove from heat and fold half of the caramelized bananas into the batter.
  8. Pour the batter into the loaf pan and sprinkle remaining caramelized bananas on top.
  9. Bake for 55-65 minutes, checking for doneness around the 50-minute mark.
