- Preheat your oven to 350°F (175°C) and lightly grease a standard loaf pan.
- In a medium saucepan, melt 1/2 cup of unsalted butter over medium heat, stirring constantly until browned.
- In a large mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mash bananas until smooth and mix in Greek yogurt, vanilla extract, and almond extract.
- Gently pour the wet banana mixture into the bowl of dry ingredients and fold until just combined.
- In a skillet, melt another tablespoon of butter, add sliced bananas and honey; cook until soft and golden.
- Remove from heat and fold half of the caramelized bananas into the batter.
- Pour the batter into the loaf pan and sprinkle remaining caramelized bananas on top.
- Bake for 55-65 minutes, checking for doneness around the 50-minute mark.
- Once baked, cool in the pan for 10 minutes then transfer to a wire rack to cool completely.
