  • 1 teaspoon Brown Sugar Light or dark brown sugar works well
  • 1 teaspoon Salt Sea salt or preferred salt
  • 1 teaspoon Black Pepper Freshly cracked preferred
  • 1 teaspoon Garlic Powder Avoid garlic salt

Method
 

Step-by-Step Instructions
  1. Bring the steaks to room temperature by removing them from the refrigerator for 30 minutes to 1 hour.
  2. Preheat your oven to 325°F (163°C).
  3. Mix the dried thyme, brown sugar, salt, black pepper, and garlic powder in a small bowl.
  4. Pat the ribeye steaks dry and rub the seasoning mixture generously over all sides.
  5. Heat a cast iron skillet on high heat, add olive oil and ensure the skillet is hot.
  6. Sear each ribeye steak for about 30 seconds on each side until a golden-brown crust forms.
  7. Place ½ tablespoon of butter on top of each steak, then transfer the skillet to the preheated oven.
  8. Cook the steaks in the oven for 10-12 minutes, checking for an internal temperature of about 125°F for medium-rare.
  9. Remove the skillet from the oven and let the steaks rest for about 5 minutes before serving.
