- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream ½ cup of softened salted butter with a mixer set to high speed for about 1 minute.
- Add ½ cup of granulated sugar and one large egg yolk, blend on medium speed for another minute.
- Gradually mix in 1 ¾ cups of all-purpose flour on low speed until just incorporated.
- Chill the dough for about 1 hour in the refrigerator.
- Scoop out ½ tablespoon balls of dough and place them on the prepared baking sheet.
- Use your thumb to press an indent into each dough ball.
- Fill each indent with your choice of jam using a small spoon or piping from a ziploc bag.
- Place the baking sheet in the oven and bake for 9 to 11 minutes.
- Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack.
