Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream ½ cup of softened salted butter with a mixer set to high speed for about 1 minute.
  3. Add ½ cup of granulated sugar and one large egg yolk, blend on medium speed for another minute.
  4. Gradually mix in 1 ¾ cups of all-purpose flour on low speed until just incorporated.
  5. Chill the dough for about 1 hour in the refrigerator.
  6. Scoop out ½ tablespoon balls of dough and place them on the prepared baking sheet.
  7. Use your thumb to press an indent into each dough ball.
  8. Fill each indent with your choice of jam using a small spoon or piping from a ziploc bag.
  9. Place the baking sheet in the oven and bake for 9 to 11 minutes.
  10. Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack.
