Cooking Steps
- Cook the sticky rice according to package instructions. Fluff with a fork and set aside.
- Prepare the broccoli by chopping it into small florets. Steam for about 3–4 minutes until vibrant green and tender, or sauté in olive oil.
- Slice the chicken breasts into strips and season with salt, pepper, paprika, chili powder, onion powder, and oregano.
- Heat olive oil in a skillet over medium heat. Add seasoned chicken strips and sauté for about 7–10 minutes until fully cooked.
- Whisk together soy sauce, honey, rice vinegar, sriracha, minced garlic, and arrowroot powder. Add to cooked chicken and let it simmer for 1-2 minutes.
- Prepare the spicy mayo by mixing mayonnaise, sriracha, and a splash of water. Adjust sriracha for spice preference.
- Assemble bowls with a scoop of sticky rice, topped with chicken and sauce, broccoli, and finished with a drizzle of spicy mayo.
