- In a large mixing bowl, combine flaked salmon, breadcrumbs, finely chopped onion, and fresh parsley. Add mayonnaise, Dijon mustard, a beaten egg, garlic powder, paprika, salt, and pepper. Mix thoroughly with a fork.
- Shape the salmon mixture into patties, about 1 to 1.5 inches thick. Place the formed patties on a plate.
- In a non-stick skillet, heat a couple of tablespoons of olive oil over medium heat for 2-3 minutes.
- Add the patties to the hot skillet without overcrowding. Fry for 4-5 minutes on one side until golden brown, then flip and fry for another 4-5 minutes.
- Transfer the patties to a paper towel-lined plate to drain excess oil. Allow to cool for a moment.
- Serve hot, either as standalone bites or on a bun with lettuce and tomato, and enjoy with tartar sauce.
