Ingredients
  

For the Meatballs
  • 1 pound Ground Beef or ground turkey/chicken
  • 1 cup Breadcrumbs gluten-free optional
  • 1/2 cup Milk or non-dairy milk
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 Egg or flaxseed meal for vegan
  • 1 tablespoon Worcestershire Sauce or soy sauce for gluten-free
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Dried Parsley
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
For the Gravy
  • 2 cups Beef Broth or vegetable broth
  • 2 tablespoons All-Purpose Flour or cornstarch for gluten-free
  • 1 tablespoon Soy Sauce optional
  • 1 tablespoon Dijon Mustard
For the Mashed Potatoes
  • 2 pounds Potatoes Yukon Gold or Russets
  • 1/2 cup Butter or olive oil for dairy-free
  • 1/4 cup Fresh Parsley for garnish

Method
 

Steps
  1. Preheat your oven to 400°F (200°C) and prepare your workstation with a mixing bowl and baking sheet.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, onion, garlic, egg, Worcestershire sauce, salt, pepper, parsley, onion powder, and garlic powder. Mix until well combined.
  3. Shape the mixture into 1.5-inch meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20 minutes or until fully cooked and browned.
  5. Peel and chop potatoes, then boil in salted water for 15-20 minutes until tender. Drain and return to pot.
  6. Mash the potatoes with garlic, butter, milk, and parsley until creamy. Season to taste.
  7. Prepare the gravy by cooking flour in a frying pan, then whisking in the beef broth, soy sauce, and Dijon mustard. Simmer until thickened.
  8. Transfer baked meatballs to the gravy and coat well.
  9. Serve meatballs over mashed potatoes, garnished with parsley.
